A entomofagia é praticada em muitos países ao redor do mundo, predominantemente em partes da Ásia, África e América Latina. Insetos complementam o cardápio de aproximadamente dois bilhões de pessoas e tem sido parte da dieta humana desde tempos remotos. Contudo, apenas recentemente a entomofagia tem atraído a atenção da mídia, instituições de pesquisa, chefes de cozinha e outros membros da indústria de alimentos, além de legisladores e agênci as de regulamentação na área alimentícia. O Programa de Insetos Comestíveis da FAO (Organização das Nações Unidas para Agricultura e Alimentação) também tem examinado o potencial de aracnídeos (aranhas e escorpiões) para a alimentação animal e humana, uma vez que, por definição, estes não são considerados insetos.

Este texto é o resumo executivo da edição 2016 do Panorama da Segurança Alimentar e Nutricional na América Latina e no Caribe, uma publicação anual preparada pelo Escritório Regional para América Latina e o Caribe da Organização das Nações Unidas para a Alimentação e a Agricultura (FAO) e do Escritório Organização Pan-americana da Saúde (OPAS)/Escritório Regional para as Américas da Organização Mundial da Saúde (OMS). O principal objetivo do projeto de segurança alimentar de emergência na Guiné-Bissau é atenuar o impacto da pandemia de covid-19 sobre a segurança alimentar e nutricional do país, além de minimizar os riscos associados à comercialização da castanha de caju. De forma geral, o projeto contribui para a realização dos Objetivos de Desenvolvimento Sustentável relacionados à erradicação da fome, segurança alimentar e melhoria da nutrição (ODS 2); e ao ODS 1 sobre a erradicação da pobreza em todas as suas formas.As realizações concretas deste projeto estão documentadas neste relatório.

Future prospects for food and feed security
2013This book assesses the potential of insects as food and feed and gathers existing information and research on edible insects. The assessment is based on the most recent and complete data available from various sources and experts around the world. Insects as food and feed emerge as an especially relevant issue in the twenty-first century due to the rising cost of animal protein, food and feed insecurity, environmental pressures, population growth and increasing demand for protein among the middl e classes. Thus, alternative solutions to conventional livestock and feed sources urgently need to be found. The consumption of insects, or entomophagy , therefore contributes positively to the environment and to health and livelihoods. This publication grew from a small effort in 2003 in the FAO Forestry Department to document the role of insects in traditional livelihood practices in Central Africa and to assess the impact of harvesting insects in their natural habitats on the sustainability o f forests. This effort has since unfolded into a broad-based effort to examine the multiple dimensions of insect gathering and rearing to clarify the potential that insects offer for improving food security worldwide.
