Synopsis (short abstract) Dans les zones humides des tropiques la première récolte de mais, la meilleure, se fait pendant la première saison des pluies; elle est prète pour la moisson entre les deux périodes de pluies abondantes. Mais au moment de la moisson, le maïs est trop humide pour étre stocké definitivement: il serait vite moisi. C'est pour cela que les agriculteurs laissent souvent le maïs sur pied dans les champs pour qu'il sèche. C'est notamment le cas dans les regions sèches de l'Afrique où cela ne pose guère de problèmes. Par contre, dans les zones pluvieuses il faut bien 3 - 4 mois pour que le mais sèche suffisamment; pendant cette période la récolte est exposée aux bêtes nuisibles et aux rafales de vent de la seconde saison des pluies. Les cultivateurs qui construisent ces greniers peuvent y entreposer leurs épis dès que la récolte est prête à étre moissonnée. La taille et la forme des greniers permettent, avec des mouvements d'air normaux, de sècher les grains en 3 ou 4 mois. Le taux d'humidité p asse de 35% a la maturité, a 15%, ce qui est assez bas pour une conservation prolongée en sacs. Cette utilisation des greniers libère les champs et permet aux cultivateurs de replanter pour une seconde récolte dans la même année.
