    This report summarizes the activities and results achieved in 2022 by the 26 experts of the One Health High-Level Expert Panel (OHHLEP). OHHLEP provided scientific advice on the Quadripartite One Health Joint Plan of Action (OH JPA) which was launched in October 2022, worked on a One Health Theory of Change that became an integral part of the OH JPA, prepared scientific opinions related to the envisaged Pandemic Instrument, and developed a white paper on the definition for the Prevention of zoonotic spillover. OHHLEP also continued to support the implementation of the Quadripartite OH JPA through development of an inventory of One Health tools. With these activities, OHHLEP supported the Quadripartite’s efforts on the mainstreaming and implementation of One Health. The report highlights main outputs and deliverables produced over the period and outlines priorities for 2023.

    Las enfermedades transmitidas por los alimentos (ETA) son uno de los problemas de salud pública que se presentan con más frecuencia en la vida cotidiana de la población. Los peligros causales de las ETA, pueden provenir de las diferentes etapas que existen a lo largo de la cadena alimentaria (desde la producción primaria hasta la mesa). Independientemente del origen de la contaminación, una vez que este alimento llega al consumidor puede ocurrir un impacto en la salud pública y un severo daño económico a los establecimientos dedicados a su preparación y venta. Ambos eventos, pueden provocar la pérdida de confianza y el cierre del negocio. Por fortuna, las medidas para evitar la contaminación de los alimentos son muy sencillas y pueden ser aplicadas por quien quiera que los manipule, aprendiendo simples reglas para su manejo higiénico. Este manual tiene el propósito de llevar a las personas que manipulan alimentos, pero en especial a los trabajadores de este rubro, el conocimiento necesario que les facilite aplicar pautas correctas en su trabajo cotidiano. Junto con lo anterior, se busca ofrecer la información base en materia de inocuidad de los alimentos, para que los países de América Latina y el Caribe (LAC) adapten los conocimientos expresados en el manual a las necesidades particulares de cada país. El manual está estructurado en tres módulos y sus anexos, que hacen relación a los siguientes temas: 1) Peligros de los alimentos; 2) Enfermedades transmitidas por los alimentos (ETA); y 3) Medidas higiénicas para prevenir la contaminación de los alimentos. La evaluación forma parte de la etapa final de este Manual. El objetivo aquí es verificar los conocimientos aprendidos durante el desarrollo del curso sobre la importancia del manejo higiénico de los alimentos para la salud de la población.

    The poultry sector is possibly the fastest growing and most flexible of all livestock sectors. Driven primarily by very strong demand it has expanded, consolidated and globalised over the past 15 years in countries of all income levels. Livestock is fundamental to the livelihoods of about one billion of the world’s poorest people. Rural poultry, in particular, is essential for the livelihood of many resource-poor farmers often being the only asset they possess. It makes up about 80 per cent of poultry stocks in low-income food-deficit countries and significantly contributes to: (i) improving human nutrition, providing food (eggs and meat) with high quality nutrients and micronutrients; (ii) generating a small income and savings, especially for women, thus enhancing the capacity to cope with shocks and reducing economic vulnerability; (iii) providing manure for vegetable garden and crop production. The importance of the socio-cultural and religious functions of villag e poultry production for smallholder livelihoods, beyond its economic or nutritional importance, is also widely recognized. This publication is a collection of short articles that give an overview of the benefits of poultry products and information about different aspects of their production. The articles are primarily written to provide information for a general audience rather than for technical experts in the concerned fields of specialization. Originally prepared as separate articl es in 2011 for the FAO poultry production website they are compiled in this document for easy access and reference.
