The Consultation was convened by the Director General of the Food and Agriculture of the United Nations upon the recommendation of the twenty-eighth session of the FAO Committee on Fisher ies. The Technical Consultation produced recommendations for consideration by the twenty-ninth Session of the FAO Committee on Fisheries. The Consultation was funded by the Governments of the United Kingdom and the United States of America, and by the European Commission.

    Fish freezing is one of the methods most used for processing fish and other edible aquatic products. Fish-freezing. industry and frozen fish products are very well known on all world markets. A flourishing fish-freezing industry (shrimp, lobster, etc.) in many developing countries was a boom during the last 10 years with wide possibilities for increasing production and export which, in many countries, is the main source of foreign currency. This document is published for planning, elaborati on of feasibility studies, operations of fish processing before freezing, during freezing, storing and transporting of frozen products. This document will provide the industry, especially in developing countries, with a practical up-to-date data of a technical and economic nature. It should be also suitable for use in governmental offices, specialized schools (training courses), etc. Main subjects covered concern raw material and its preparation for freezing, source of cold, processing equipment , packaging material, storage conditions and equipment, management of cold stores, construction of cold stores, transportation, as well as costing and case studies. It also includes diagrams, schemes, figures, tables and numerical data related to the subject.

    Fish marketing advice formed an important part of the activities of a project undertaken by the Government of the Philippines with assistance from the United Nations Special Fund 1 and the Food and Agriculture Organization of the United Nations. The work started under the Expanded Programme of Technical Assistance in 1965/66 and was completed under the Special Fund in 1967–69. A survey of fish marketing and distribution practices in the Philippines was conducted, and recommendations made conce rning wholesale markets, landing facilities, fish auctions, transport and distribution and certain aspects of fish processing. Two harbours, Navotas and Dalahican, were suggested for immediate consideration for the construction of fishing ports. Pending decisions on further fishing harbours, increased use should be made of existing inter-island shipping ports. Wholesale and retail prices of fish at the Navotas market and Manila markets were obtained for an 11 month period in 1968/69, and the d istribution of fish from Navotas to other provinces is reported on. 1 The United Nations Special Fund and the Expanded Programme of Technical Assistance were merged to form the United Nations Development Programme on 1 January 1966.     The Protocol of 8-9 July 1946 relative to the dissolution of the International Institute of Agriculture, transferred the functions and assets of the said Institute to FAO. Of these assets, the Library is unquestionably the most outstanding and is a lasting record of the Institute's work and its achievement in the field of agriculture. This catalogue will undoubtedly contribute towards a better knowledge of this international Library. This volume in its present form, represents the systematic card-index, by subject of the Brussels Decimal Classification, in French and English, and it's supplemented by the general alphabetical index of authors.

    Fresh fish is a central point in fish as food utilization. First, it is in itself the most important item both on local and international fish markets, second because it is not possible to obtain a safe and quality fish product unless fresh fish is used as the primary raw material. FAO understands that these are the basic concepts on which it is necessary to insist in order to provide fish markets with safe fish and fishery products of improved quality, and to contribute to the reduction of post -harvest losses. In 1988, FAO published "Fresh fish - quality and quality changes" (FAO Collection: Fisheries, No. 29), authored by Professor Hans H. Huss. It has been published by FAO in English, French and Spanish, and apart from the original Danish version, it has been translated and published by FAO field projects into Arabic, Chinese and Vietnamese. It has served for the training of thousands of fish technologists throughout the world, in particular during the development of the FAO/DANI DA Training Project on Fish Technology and Quality Control. The broad experience gained during the training activities has been extremely useful to improve, update and enlarge whenever necessary the above-mentioned document. After seven years, the need became apparent for a new publication on the subject. Professor Huss prepared the new document with the assistance and contribution of colleagues and experts in the various subject fields involved, as acknowledged below:
