    Since the mid-1990s the market for organic foods has been expanding rapidly and, among these products, organic fruit and vegetables have been growing the fastest. The publication World Markets for Organic Fruit and Vegetables presents the recent findings of a joint FAO/ITC/CTA study on international trade in fresh organic fruit and vegetables. It provides detailed information on demand for these products in the world’s largest organic markets (United States, Japan and European countries), includ ing data on sales and imports. The data was obtained through recent surveys carried out in each country specifically for this publication. In addition to the current market situation, the study analyses the prospects for further growth in sales in the short and medium term. Case studies are provided of seven developing countries that have established an organic export sector or are in the process of doing so. The publication gives recommendations on which product categories are likely to provide market opportunities to developing countries.

    Small-scale forest-based processing enterprises comprise an important, but neglected, part of the forestry and forest industries sector. They process a large part of the raw materials from the forest and supply some of the main markets for forest products, in particular in the rural areas of developing countries. Our concern in the work reported on in this publication has been to determine the main features, prospects and problems of such small-scale enterprises and what support could enhance their developmental contribution, and therefore the developmental impact of the forest sector. Many small enterprises are currently unstable, and offer little security or prospect of self-reliance for those engaged in them. These problems need to be tackled by promoting viable enterprises run by rural people through effective participatory organizations which can increase peoples' control over their own economic destiny. External supp ort to increase production and efficiency needs to be compatible with those valuable elements of local culture which still have a role to play in the modern context.

    This manual is intended to surve as a guide to farmers and processors of fruits and vegetables in rural areas. It contains basic but valuable information on post-harvest handling and marketing operations and storage of fresh and processed products. It provides practical examples of preserving fruits and vegetables addressing a combination of factors, highlighting technology which, when combined, has a positive and synergistic effect in preventing biochemical and physiochemical reactions and micr obial growth - the main causes of quality losses in fruits and vegetables. The suggested methodologies combine technologies such as mild heat treatment, water activity reduction (aw), lowering of the pH and use of anti-microbial substances to realize the potential of minimally processed, high-moisture fruit products. These relatively new technologies have been successfully applied to several important tropical and non-tropical fruits in different countries of Latin America and are considered app ropriate and recommended for use in other fruit-producing countries around the world.
