    Under the framework of the TCP regional project TCP/SNO/3501 - Capacity building for food losses redution in the Near East this guide will serve as a technical reference and tool to be used by all stakeholders in the apple value chain in Lebanon in order to reduce the post harvest losses of apples. The guide contributes to the FAO SO4 in particular output 2.2 Evidence-based fod loss and waste reduction programs are developed at national, regional and global levels, and to output 2.3 Governments and relevant stakeholders are provided with support to promote inclusive, efficient and sustainable agro-food value chains.

    This curriculum was prepared under the project "Upgrading the Technical Agricultural Education System in Lebanon, OSRO / 601 / LEB / NET". In line with the strategic objectives of the Food and Agriculture Organization, in particular, Strategic Objective No. 3: “Rural Poverty Reduction” and Strategic Objective No. 5: “Increase the resilience of livelihoods to threats and crises”, prepared by FAO - in cooperation with AVSI and WARD and according to Ibrahim Al-Hariri and Dr. Hussein Hassan. (2018). A guide to reducing post-harvest food losses in the apple production chain in Lebanon. Beirut: Food and Agriculture Organization of the United Nations (FAO) and the Lebanese Ministry of Agriculture. This curriculum aims to train young people and familiarize them with areas related to the operations of harvesting and post-harvesting of apples through its application in technical and vocational training and education for the age group of 14-25 years. At the end of this training, the trainee will be able to familiarize himself with the apple harvesting process, learn about the methods of transporting, packing, and cooling the apple product, in addition to practices done to reduce the causes of food losses in the apple production chain.

    This manual, Volume II of the training manual on the prevention of post-harvest food losses, presents material from a wide variety of disciplines associated with the prevention of food losses and development of marketing operations, particularly those in fruit, vegetables and roots and tubers. It is directed to field staff, project supervisors, teachers at agricultural schools and at training institutions, and extension personnel connected with the handling and marketing of those commodities. This manual should serve as a reference work on the prevention of post-harvest food losses. For specific training purposes, the manual takes up a number of crops and techniques from which the trainer can select according to local conditions. Trainers are encouraged to supplement the material by practical work and by detailed worksheets or handouts covering special topics of local interest.
