La organización del Curso está a cargo de la Oficina Regional de la FAO para América Latina y el Caribe y el Instituto de Desarrollo Agroindustrial de la Universidad Nacional Agraria La Molina del Perú. Este Manual se compone de dos partes. La primera describe las generalidades del local, equipo y procesos para la transformación artesanal a pequeña escala de frutas y hortalizas. La segunda describe las materias primas, equipos, materiales y operaciones de procesamiento en la elaboración de frutas y hortalizas. -

No results found.Este manual tiene por objetivo el entregar una visión general de las diversas posibilidades que existen para el procesamiento de frutas y hortalizas. Está destinado a servir de apoyo y guía a todos aquellos grupos de personas que tienen la idea de estructurar microempresas agroindustriales o artesanales destinadas al aprovechamiento de aquellos recursos naturales de sus propias comunidades que normalmente se pierden en cantidades importantes en toda la región de América Latina y el Caribe, al ig ual que en todo el mundo. Es absolutamente imposible tratar de compendiar en un volumen de las dimensiones de éste, todos los aspectos que tienen relación con el procesamiento de frutas y hortalizas, especialmente en una región tan rica en especies de esta naturaleza como América Latina y el Caribe. Por esta razón, fue necesario seleccionar los procesos de mayor importancia en la industrialización artesanal o de pequeña escala industrial, evitando referirse a aquellos que son menos aplicabl es en estas dimensiones, como es el caso de la congelación. Se debe tener claro que los destinatarios de este manual serán grupos de escasos ingresos, que en busca de un porvenir mejor intentarán dar un aprovechamiento más integral a los recursos naturales que son inherentes a su vida diaria, es decir, aquellos que les son comunes, de fácil obtención y a un costo adecuado a sus posibilidades. -

No results found.The purpose of planning for forestry development is to establish a workable framework for forest use and conservation which incorporates the economic, social and environmental dimensions on a sustainable basis. The framework is about creating a shared vision of how forests will be used and protected. This can be summed up in a single central question: Trees and forests for whom and for what? The question is not new but what is new is the perception that so many different groups have an interest in the reply. Forestry planning has traditionally been mainly concerned with the production of timber for industry and other wood products, and with forest industry development. Planning for environmental goals also has a long history but was largely restricted to designated areas for exclusive conservation. National forestry development agencies were essentially responsible for the sustained yield management on protected public forest lands and for reserved forests. The term "sustained yield " was mostly limited to wood production and therefore excluded the majority of other forest products and services. Although most forestry agencies have made progress towards multiple-use management, planning remains often biased towards timber in a wide range of countries. Many of the actions taken in order to stimulate forestry development in the immediate failed to sustain the momentum of growth in the longer term. Short term achievements sometimes resulted in degradation or destruction of the stock of natural capital needed in order to maintain growth in the future or reduced options for future end uses by degrading the forest capital.
