Synopsis (short abstract) Microbiological Criteria have been used in food production and the food regulatory context for many years. While the food-specific aspects of microbiological criteria are well understood, the mathematical and statistical aspects are often less well appreciated, which hinders the consistent and appropriate application of microbiological criteria in the food industry. This document has been developed to begin redressing this situation. A particular aim of this document is to illustrate the importa nt mathematical and statistical aspects of microbiological criteria, but with minimal statistical jargon, equations and mathematical details. It is hoped that the resulting document and support materials make this subject more accessible to a broad audience. This volume and others in this Microbiological Risk Assessment Series contain information that is useful to both food safety risk assessors and risk managers, the Codex Alimentarius Commission, governments and regulatory agencies, food produ cers and processers and other institutions and individuals with an interest in Microbiological Criteria. This volume in particular aims to support food business operators, quality assurance managers, food safety-policy makers and risk managers.

    This report draws attention to the threat of viruses as a risk to public health when they are present in food. Viruses require special attention because they behave differently from bacteria, and because currently used control measures typically either have not been validated and there is not a good understanding of their efficacy towards viruses, or are not effective in controlling virus contamination. Data from recent studies have shown that foodborne viral infections are very common in many parts of the world despite the measures already in place to reduce bacterial contamination.

    The process of developing exposure assessment guidelines was initiated at a workshop held in Seattle, Washington, United States of America, from 5 to 9 December 2001. The workshop participants were scientists currently involved in exposure assessment of foodborne microbiological hazard in humans or animals. The document drafted during this workshop was subsequently reviewed by the workshop participants, and a revised draft prepared. This was then reviewed by another group of external peer review ers. The guidelines were finalized taking into account all comments received. These guidelines are part of a series of guidelines on microbiological risk assessment being prepared by FAO and WHO. Guidelines on Hazard Characterization for Pathogens in Food and Water have already been published as number 3 of this FAO/WHO Microbiological Risk Assessment Series. Guidelines on risk characterization are in preparation and will be published as number 13 in the FAO/WHO Microbiological Ri sk Assessment Series.
